This 3 ingredient crock pot recipe is one of the most flavor filled chicken dinners you will ever have!

You all know that my Crock Pot is my best friend for busy week night dinners! I have quite a few recipes I love using it for but it seems like a lot of my favorites seem to be Mexican dishes. This though is definitely the exception!
I LOVE making Caesar chicken with my slow cooker because it is absolutely delicious and so incredibly versatile. My whole family loves it and I can make a large batch and then either use it throughout the week or freeze it to use over the course of the next few weeks in meals.
You can use it to make anything from salads to wraps to sandwiches and even pizza! If you are on a special diet or gluten free, you can serve as lettuce wraps or on top of greens. There isn’t much better than a meal that can be made over so many ways it will never seem like you are eating leftovers.
All you need are 3 simple ingredients.
- Chicken Breast
- Vinaigrette style Caesar Dressing (NOT creamy) – I always use Ken’s Lite Caesar
- Chicken Broth

Just add the three ingredients into your crock pot, cover, set it to low, and let the magic happen for 6-8 hours. Whenever the timer goes off you should be able to pretty much just use 2 forks to shred the chicken right inside the crock pot without even having to remove it. Less mess always equals a win for me! Mix the shredded meat into the juices in the bottom of the crockpot and you are ready to go!
In the recipe I specify to use three chicken breasts, although in my picture there is only two. I know someone will ask so I will go ahead and tell you I bought the chicken breast at Sprouts. When I opened the package I realized the chicken breasts were ridiculously enormous. Like no chicken is this big – big. I figured that there was no way this happened naturally but at this point had to make dinner so in two gigantic chicken breasts went and it probably made the equivalent of 4 regular ones!
This is the perfect dinner for a busy weeknight especially when it pulls double and triple duty with the leftovers being made over as new and exciting dishes for other meals.

3 Ingredient Crock Pot Caesar Chicken
Ingredients
- 3-4 Chicken Breasts
- 1/2 Bottle Ken's Light Caesar Dressing & Marinade
- 1/2 Cup Chicken Broth
Instructions
- Add chicken to the crock pot.
- Cover with 1/2 bottle of caesar dressing and broth.
- Cook on low for 6-8 hours.
- Shred chicken with fork and mix it with the remaining juices.
- Serve on sandwich, salad, wrap, etc.
- Leftovers can be frozen in individual portions.
