I am the kind of cook that loves things to be easy in the kitchen. Occasionally I will be super motivated to dive into a long complicated recipe, well actually let’s change occasionally to almost never. I love to eat and value quality and the flavors you can achieve by making things from scratch but when you can get that amazing taste and cheat a little bit, well, I am all for that!
I would consider myself somewhat of a cookie connoisseur. Although my taste ebbs and flows, the cookie I always come back to is an oatmeal, chocolate chip with a hint of peanut butter. I love this cookie. Then one day browsing down the baking aisle, I had an epiphany. If I took that oatmeal chocolate chip cookie mix right there and added a hint of peanut butter, I might have the same flavor as my fav with a mere fraction of the work. Low and behold I had hit it. They are chewy, moist, and full of great cookie flavor. I have probably made this 200 times now. It takes about 5 minutes to make plus baking time. It is the perfect thing to whip up on short notice or when you have a craving but no motivation to cook. I love making it with my kids because it minimizes the mess factor. I find that 2 mixes make about the amount as one normal batch of cookies I would make from scratch.
So here is the fix for this mix:
1 Betty Crocker Oatmeal Chocolate Chip Cookie Mix
Make as directed with:
1 egg
1 stick of butter, softened
Add ¼ c Peanut Butter (crunchy or creamy)
Preheat oven to 375 F. Mix all ingredients until well combined and drop by rounded spoonfuls onto an ungreased cookie sheet. Bake for 10-12 min or until edges are golden brown and centers are set.
