A tender, juicy chicken breast layered with creamy asiago cheese spread then wrapped in bacon and baked to perfection for a quick and easy dinner that tastes like a gourmet masterpiece.
Mmmmmmm… cheese.
Back in April I went to one of my favorite events of the year, SNAP Conference. Â I guess I could tell you it is a blogging conference, but really, it is like the mecca for brilliant creative minds. Â I mean from the hands on creative classes to the crazy awesome swag (HELLO beautiful new Instax Camera!) to the to-die-for outfits everyone is wearing (of course most of them are from Cents of Style!) it is just so much fun. Â So much learning. So many friends. Â All in just such a tiny amount of time.
Anyways, sorry to get sidetracked, Â (and especially if you are a guy and REALLY don’t want to see the cute outfit pics) so back on course. Â One of the sponsors at Snap this year was Laughing Cow. Â I am so excited to see more food sponsors there because as much as I like to create, I loooooove to cook and my blog shows it! Â They had this fabulous lounge where you could try a bunch of different flavors of their cheeses and I absolutely fell in love with one of their new flavors, Creamy Asiago!
They sent me home with a couple of wheels of it and I managed to salvage a few from my kids who literally devoured it on crackers.  I knew just what I had in mind for this delicious little treat. It was going into my newest chicken bake recipe. Bacon & Creamy Asiago Chicken Bake Recipe to be exact.
I cook a lot, so I usually feel pretty confident when I am in the kitchen creating recipes. Â And although I am a big fan of Laughing Cow cheese, I had never baked with it, so I was a little uncertain how it would turn out and I was just crossing my fingers for a good result.
What could have happened was that I put it in the oven and the cheese just melts away down to the bottom of the casserole dish and burned. Â But that isn’t what happened. Â Not at all.
What happened was absolute perfection! Â The chicken breast was thick and juicy. Â The cheese cooked perfectly, held it’s shape, and kept its amazing flavor that was enhanced by the rich bacon surrounding it.
It came out of the oven looking (and smelling) like something you would pay $50 a plate for at a fancy restaurant, but really only took a few ingredients and minutes of prep to get into the oven. Â I am a mom with three tiny kids. Â Quick and easy is the only way I cook!
So let’s cut to the chase and get you the recipe for this little slice of heaven!
Bacon & Creamy Asiago Chicken Bake Recipe
To make this dish gather up these simple ingredients:
- Boneless Skinless Chicken Breast
- Laughing Cow Creamy Asiago Cheese
- Bacon Slices
- Salt & Pepper
Start by trimming your chicken breast and then seasoning each chicken breast with salt and pepper, and lay them flat in a baking dish.
Next, use one wedge of the Creamy Asiago Cheese per chicken breast and spread it over the top of the chicken breast. Â If you have extra large chicken breasts you might need 2 wedges for each. Â I made a nice thick layer about 1/4 of an inch thick throughout.
After you spread the cheese, take each breast seperately and wrap it in bacon by starting with the first slice at the top of the chicken breast and wrapping it around with a slight overlap. When your first slice ends, use a second or third until the entire length of the chicken breast is wrapped and replace the chicken in the casserole dish.
Once you are done wrapping the chicken place them in an oven preheated to 400ËšF on the middle rack and bake for 30-40 minutes or until the chicken is done through and no longer pink.
Now here is your fair warning… your house will smell heavenly. Â If there is anyone else around, they will probably come out of the woodwork and wonder what is going on in the kitchen because it really smells amazing.
When you take it out you are left with a dish full of gorgeous, thick, juicy, bacon wrapped chicken breasts. Â Perfectly browned, and filled with creamy delicious Asiago cheese spread. Yum.
You can serve this up a number of ways. Â It stands on it’s own served with a side of veggies or a salad, but you can also serve it with rice, potatoes, or even over sauteed spinach. Â You just can’t go wrong when you combine creamy asiago cheese, crisp bacon, and tender chicken.

Bacon & Creamy Asiago Chicken Bake
Ingredients
- 3 Chicken Breasts
- Salt & Pepper
- 1 Wheel Laughing Cow Creamy Asiago Cheese
- 9 Slices of Bacon
- Pam Cooking Spray
Instructions
- Season the chicken breasts with salt and pepper and then spread 1-2 wedges of the creamy asiago cheese over the top of each chicken breast.
- Wrap each chicken breast in bacon by starting on the underside and wrapping each strip of bacon around the chicken breast, until it is covered in bacon, which should be 2-3 slices per chicken breast.
- Lay the chicken breast in a baking dish and bake at 400F on the middle rack for 25-45 minutes or until cooked through.
- Serve hot over rice, spinach, mashed potatoes, or by itself. Enjoy!

Okay! I’m about to try this but I only have laughing cow spicy pepper jack cheese. I’ll let you know how it turns out!
