This easy Bruschetta Chicken Bake is packed with fresh ingredients for a wholesome dinner, but takes as little as 15 minutes to prep and put in the oven. It is easily one of my favorite easy dinner recipes. If you enjoy Bruschetta as an appetizer, you are going to love it as a full meal!
Bruschetta Chicken Bake Recipe
Before I dive into the recipe for my newest and freshest chicken bake, the Bruschetta Chicken Bake, I have to have a little heart to heart.
When I started this blog almost 5 years ago, I had no idea what I was doing and was convinced that no one would even listen. I’m not funny, o clever, and I rarely know the right thing to say. As a matter of fact, it took well over 1 million visitors coming to the site every month for YEARS, and some encouragement from a few friends to realize that I am not just writing to myself, but you guys really are out there and really do look forward to my recipes.
Recently I was having dinner one of my friends, Jamie, and she was asking me about my website. I told her I posted easy recipes, some DIY and crafts and ideas for family fun. She said, “Oh really? I need easy recipes. But are your recipes REALLY easy? Because I am not that great at cooking and really don’t enjoy it.” YES! They really are easy! At least I think so. I told her to take a look and let me know what she thought.
I didn’t know her plans but she ended up making two recipes from my site that week and at the end of the week she texted me and said, “Soooo easy! I HATE cooking but I’ve had fun making your meals!!!” We had a nice little text convo and it just really encouraged my heart.
I have always believed that a recipe doesn’t have to be hard to be great. That you CAN get dinner on the table for your family, even on crazy busy nights. That cooking from scratch doesn’t have to mean endless lists of ingredients and hours in the kitchen.
Blogging can be lonely sometimes. Is anyone even listening? Do I pass on things that are just more noise, or are they really special? Is it worth doing at all?
I am not a chef. I don’t have culinary training. I am just a girl, with a busy family, who really likes to eat. Does that qualify me to make up recipes?
Hearing those words from her, were exactly what I needed. If I can help one mom, wife, friend, just one person feel like they can cook, create, give their family a meal, then that is what this is all about.

How to make Bruschetta Chicken Bake
If you are an old friend, you know that in this section I am going to walk through the recipe with you step by step. I like to take the time to go through each step to tell you my thoughts on the ingredient or instruction and break anything tricky down, or explain my preferences when I have a strong opinion. I find that this helps answer a lot of questions and helps you to really feel like you know the best way to do each step on this Bruschetta Chicken so you come out the the most yummy dinner. Bruschetta Chicken Bake Ingredients
Just a few simple ingredients in this recipe. One big tip is that fresh is key here! Don’t be tempted to use produce that is canned or jarred, it will affect the outcome quite a bit, but I do have a few time saving tips for you to get this made quick!
Bruschetta Chicken Bake Ingredients
- 3-4 boneless, skinless, chicken breasts- This will end up to be about 1.5-2 pounds of chicken breasts. Just trim any excess fat or gristle off and you are ready to go.
- 6 roma tomatoes- If they are large you may be able to just use about 4, or if they are small you might want a couple of extra. Although it doesn’t take too long, chopping the tomatoes is probably the most time consuming part of this recipe. If you want to save a few minutes you can look for pre-chopped tomatoes in the refrigerated produce section or you can pre-chop tomatoes at home up to 24 hours before you want to make this recipe. Just chop them up and stick them in the fridge. Then when you are ready to use them, just drain any excess juice and continue with the recipe.
- 1/2 cup fresh chopped basil- You can usually get fresh basil year round in the produce section of the grocery store. They usually have it in two places. One is in a plastic package in the refrigerated section. The other is actually in a small pot growing fresh. Chances are your store will have at least one, if not both!
- 2 cloves fresh chopped garlic- Again, fresh is key here. I just crush the garlic with the side of my knife, then, chop it up quickly.
- 2 tbsp balsamic vinegar
- 1/2 tsp salt
- 1/2 tsp black pepper
- 4 oz shredded mozzarella cheese– This is about 1 cup. You could also get fresh mozzarella and just chop it in small pieces and sprinkle it over the top.
For garnish (optional)
- Fresh chopped basil– you really can’t have too much fresh basil! YUM!
- Balsamic Glaze- If you have never tried this, you have been missing out on life! You should be able to find it near the regular balsamic vinegar, except it will be in a smaller bottle. It is a really thick sweet glaze that add the perfect compliment to the flavors in the dish, so although it says optional, really you need this in your life!
Bruschetta Chicken Bake Instructions
- Preheat the oven to 375˚F
- Chop the roma tomatoes into small 1/4″ pieces. Chop basil and garlic. In a large bowl, toss the tomatoes, basil, and garlic with the vinegar and half of the salt and pepper. I like to chop everything really small in this dish so that it makes it really easy to eat and allows the flavors to really combine and sink into the chicken.
- Lay the chicken breasts flat in the bottom of a large baking dish and season with the remaining salt and pepper. Pour the tomato mixture over the top of the chicken and then use a spatula to spread it evenly over the chicken. Top with the mozzarella cheese.
Make sure you use a big enough baking dish where everything doesn’t pile up too high. The thicker it is, the longer it will take to cook, so using a larger dish where things have room to spread out a bit is really helpful.
- Bake on the middle oven rack for 35-45 minutes or until the chicken reaches an internal temperature of 165˚F. Depending on how thick your chicken is, how big your dish is, your climate, and how your oven cooks, the cook time could vary a bit from the low end to the high. Check frequently until it is done! If the cheese starts to get more brown than you like, you can loosely cover with foil.
- Top with fresh chopped basil and balsamic glaze to garnish. Serve hot and Enjoy!
How to Serve Bruschetta Chicken Bake
This dish goes so well with so many things! Depending on what you like, or what your dietary restrictions are there is something that is sure to please your palate!
Serving ideas:
- With rice- try long grain white, brown, or wild rice.
- With garlic mashed potatoes
- On top of garlic toast
Low Carb Serving Ideas:
- With roasted cauliflower rice
- On top of sautéed spinach
- With a side salad

Ingredients

- 2 cloves fresh chopped garlic
- 2 tbsp balsamic vinegar
- 1/2 tsp salt
- 1/2 tsp black pepper
- 4 oz shredded mozzarella cheese about 1 cup
- For garnish optional
- Fresh chopped basil
- Balsamic Glaze
Instructions

Do you think I could use cherry tomatoes and sliced them in quarters for this recipe. I’m not sure if you answer questions but I hope so. I would like to make it for company in a couple of days

My husband and I really enjoyed this recipe. It tasted so fresh. The cheese and glaze just really was fantastic. Only thing I would do differently would be using thin sliced chicken instead of the full size chicken breasts, but that’s because I prefer less meat.

I use store bought bruschetta topping and feta instead and never leave out the balsamic glaze! I have done this on basa fillets as well with no cheese or glaze…never disappoints!
