Save time by cooking your sweet potatoes in the crock pot! Perfectly cooked, fluffy, sweet potatoes with just minutes of prep is why this is one of my favorite easy recipes!
Me + My Crock Pot = Love. It is a simple equation and ridiculously true. There is just nothing better than throwing a few ingredients in a pot and coming back at dinner time to a perfectly cooked dish. I have done so many things in my crock pot and prepping side dishes is absolutely one of my new favorites!
Sweet potatoes are something I have learned to love to cook with. It is delicious on it’s own but it is just downright magical in a frittata, or mashed with other veggies, or bulking up a chili. Something about the sweet and savory flavor just makes it the perfect compliment to pretty much anything.
Since I have been cooking with them more I love to have them on hand already cooked. It can take awhile for sweet potatoes to cook so when I add them into dishes I like to have them precooked so I am not waiting for them to be cooked through when I make a dish. It is even great to have on hand if you have a little one to mash or dice as baby food!
I have been making baked potatoes in the crock pot as a time saver for a long time, so when I needed to free up some oven space last Thanksgiving, I knew I would be throwing the sweet potatoes in the crock pot so I could forget about them and have one less thing to worry about. It was my first time to make them in the slow cooker, but the turned out perfect! They were tender, fluffy and everything you want in a baked potato! Those sweet potatoes were destined for sweet potato casserole (yup candied yams, yum!) but we eat them plain or use them to add to pretty much anything!
It really couldn’t be easier. Just tear sheets of foil big enough to wrap the potatoes. Wrap them up and toss them in the crock pot.
There was one good lesson learned though! The juices can leak through the foil and make a yucky burnt mess on the bottom of the crock pot, so ever since that first time, I ALWAYS line my crockpot with foil before I put them in. Make sure your foil is pretty smooth along the edges of the pot though because you want the lid to form a good seal and not let much steam out while cooking so things don’t burn in there.
I cook them on high for 3-4 hours or low for 6-8 hours. To check if they are done, just pop off the lid and stick a fork straight through the foil. If it is tender and easy to push the fork in it is ready. If it is still firm, give it a bit longer.
Seriously, this is the best. Give it a try and I bet two things will happen. You will have sweet potatoes more often AND you will never cook them any other way!
