It is already triple digits here so we are full up in the swing of summer. With the heat that has set in, I am always looking for summer recipes that don’t heat up the house. It is hard to find things that are new and delicious and I tend to get stuck in that daily grind and get in a major dinner rut! Today though, I have a major winner for you! I have had this recipe idea for Southwestern Chicken Salad floating around in my head for some time now and I new it would be good. But it wasn’t good. It was GREAT! So good. I wanted to eat it for every meal kinda good.
Not only is it totally delicious, but it comes together quickly and packs a few extra veggies in every bite. I have been eating it on toast, crackers, in an avocado, and that is only when my kids don’t steal it before I get to it.
So all you need are some pretty simple ingredients. {Scroll down to the bottom for a full printable recipe} Start by mixing your mayo, sour cream and taco seasoning until combined and smooth.
Next add in the corn, tomatoes and cilantro and give it a good mix!!
I used Hunt’s Fire Roasted Tomatoes and it really added that extra layer of flavor to the chicken salad. Super delicious! I picked up the tomatoes at Walmart and they had SO many varieties of Hunt’s diced tomatoes to choose from! So if you would rather have tomatoes with bell pepper and onion, plain, or tomatoes with green chilies, they have got you covered! You could substitute any flavor tomatoes that your family loves to customize the dish.
The other thing I love about Hunt’s is that they can the tomatoes within hours of picking and use a flash steam process to peel their tomatoes using only water and no lye. These things are important to moms like me with little mouths to feed and bodies to nourish. You can read more about the flash steam process here.
Once your veggies are mixed in, just add about 2 cups of shredded chicken and stir it all together and stick it in the fridge to chill. Super simple right? To make life even easier I like to cook and shred a whole family sized pack of chicken breast at once using this method that literally takes seconds! Then I package it up into meal sized portions place it in freezer bags and freeze it. That way I have plenty of meat ready to make a meal with almost no effort most nights!
As I mentioned above, this is perfect to serve so many ways! It is fresh and delicious and perfect for an easy summer meal. You could even make it a snack for the kids or a party appetizer by putting it on crackers with a little slice of cheddar or avocado on top. Yum!

{Easy Summer Recipes} Southwestern Chicken Salad
Ingredients
- 1/2 Cup Sour Cream
- 1/2 Cup Mayonaise
- 1 Tbsp Taco seasoning
- 1/2 Cup Hunt's Fire Roasted Diced Tomatoes drained
- 1/2 Cup Canned Corn drained
- 1/4 Cup diced cilantro
- 1 green onion diced
- 2 cups shredded chicken breast
Instructions
- Combine the sour cream, mayo, and taco seasoning and mix until smooth.
- Add the corn, Hunt's Fire Roasted tomatoes, cilantro, and onion and mix into the mayo mixture.
- Stir in the chicken breast and combine until the chicken is evenly coated with the mixture.
- Chill for 1 hour or until you are ready to serve.
