Just another Menu Monday (please sing in your head to tune of Just Another Manic Monday, please…so I’m not the only one…) So what’s on the menu this week for us? Well, for starters we will start with a starter! This pin for 5 Layer Greek Dip by The Lovely Cupbord looks like Greek heaven to me! I love Greek food. I love the flavors and how you never feel weighed down by it yet you are totally satisfied. As a matter for fact I once saw this documentary on modern Greek culture and they were talking about how they are some of the healthiest and longest living people in the world. Isn’t it great when foods you love just happen to be healthy too? Sticking with the Greek theme, I found a pin for Homemade Pita Bread by Delicious Shots that I want to make into chicken pitas this week. They call this a “beginner bread,” which I am all about because I just translate that to mean easy! This recipe is measured in grams so you will need to convert it with something like this cooking measurement converter. If you aren’t into converting, just pick up some pita at the grocery store. This pin Greek Chicken Pitas from A Long (enecker) Short Story gives you all the goodies to fill the pitas including a tasty looking tzatziki sauce!
I try to incorporate some beef recipes into each week. I am not a beef eater but I don’t want to push my dislikes onto my family so for the sanity of my husband and the expansion of my children’s palate, I do try to branch out beyond chicken. This pin I found for Crock Pot Fench Dip Sandwiches from Beth Cooks looks like something that would be great for dad and the kiddos. French dip sandwiches are just a classic. It’s a bonus for me that it is a crock pot recipe. It is also freezer friendly so on the weeks I don’t feel like cooking a beef meal my hubby can just heat it up and enjoy a change of pace for himself. I will partake in the buttered lemon garlic potatoes that accompany this recipe though. Those sound amazing!

She talks about how this is a great easy meal and hey, its got spinach, that’s a super food, so let’s just go ahead and file this away in the healthy category.
