Tomorrow my little boy turns 3. THREE! For all you experienced mommies out there, does it ever get more believable when your baby gets a year older? I am pretty certain the answer is no, but hopefully over the years I will learn to contain my tears a little better! I am happy. I am happy. I am happy. Okay everything is better. This week our menu planning will be centered around fun kid food to make Micah’s whole birthday week so much fun!
I am lucky that my little guy really does have a pretty good appetite and will eat a variety of things but he does have favorites. Among his favorite foods and not surprisingly for a three (tear) year old are many classic kid foods, chicken nuggets, corndogs, mac & cheese, pizza and hot dogs. I’m no supermom and we eat a lot of dinosaur nuggets from Costco at our house, but when I get the motivation to make it a little special we all love homemade chicken nuggets. This pin for Crispy Baked Chicken Nuggets from The Comfort of Cooking is a winner for kid friendly and healthy. It is nice when I know I am feeding him things that aren’t packed with preservatives and unpronounceable ingredients. Too bad I can’t make them in the shape of a dinosaur too. Oh well… can’t win them all!
Another Costco staple for us is the big box of mini corndogs. My little (and big) guy loves them. I never thought about making them myself…. Before Pinterest that is! This pin for Jiffy Corn Dog Mini Muffins from My Kitchen Adventures is a great way to make a baked version of these classic kid treats! Sign me up!
For his birthday dinner we decided to do a make your own pizza dinner. Micah loves to be interactive in the kitchen so I know that this will be the perfect fun dinner to celebrate his special day! I plan to use this pin for Perfect Homemade Pizza Crust from Annie Eats. As an added bonus we can have kid toppings for him (cheese and pepperoni) and more grown up toppings for us (grilled onions, mushrooms, pesto, feta, cherry tomatoes).
You can’t have a birthday without cake so while I would like to say I am making him this super amazing super hero cake, this construction cake from Fredellicious is a little more doable. And baby (now big) boy is just like his mama… he loves chocolate!
