Spring has sprung {well… at least on some of us!} and summer is on its way. That means one important thing to me…. My menu is is loaded with fresh, crunchy, healthy salads. I think there is nothing more perfect on a crisp spring day than a salad. Loaded with veggies that are just coming into season, piled high on my plate, I could eat them all day, every day!
I think salad is something you can absolutely love eating as long as you follow two rules. Number one is you have to have some gooooood dressing. You won’t find any ranch off the grocery store shelf here. When you have great dressing you will love salad, so it is absolutely a must. Number two is that you have to switch it up. There are so many ways to make a salad new and exciting, so don’t settle for some tasteless iceberg on a plate with a glob of dressing. Keep it new and the flavors exciting and salad will never seem like a meal you are settling for.
So now, off my soap box, let’s talk about today’s salad. It is kind of my go to for a quick and easy salad. It isn’t involved or hard to make in any way, and I keep pretty much all of the ingredients are things that I try to keep on hand. One of my favorite tricks for making a salad taste really fresh and unique is mixing a fresh herb in with my greens. It adds a little extra that really makes it have a little something extra.
The name really says it all. Tomato Mozzarella Avocado Salad with Basil. So grab your favorite greens- I prefer romaine or spring mix. Next take your tomatoes and chop them up. Slice the avocado, and then take your mozzarella and chop it into 1/2″ cubes. Chop up the basil and toss it all together then season with salt and pepper. Then for the dressing. Like I mentioned before, I am kind of a dressing snob. I think it is really important. I always serve this salad with balsamic vinaigrette. My first choice is to top it with the recipe I share here. It is quick and easy to make, but I also really love the creamy balsamic vinaigrette that they sell in the refrigerator section at Fresh & Easy. It really is fabulous.
That is all there is to it. Quick, easy and, oh, so so delicious. Enjoy this over the spring, summer, heck… why not all year.

Tomato Mozzarella Avocado Salad with Fresh Basil
Ingredients
- 6 cups mixed greens
- 12-18 basil leaves
- 2 roma tomatoes
- 4 oz mozzarella cheese
- 1 avocado
- Salt and Pepper
Instructions
- Chop basil, tomatoes, mozzarella, and avocado.
- Toss with mixed greens
- Season with salt and pepper to taste.
- Serve with balsamic vinaigrette.
