This Whole30 Broccoli is one of my FAVORITE go to salads. The best part is that it is super quick and easy to throw together. We usually pair this as a side with grilled meats, barbecue sandwiches or just by itself for lunch. The crunch and flavor pop in this salad makes it worth every bite. Not only is it made to be Whole 30 compliant, but this Broccoli Slaw is loaded with the best flavors from bacon, cashews, and fresh apples.
Whole30 Broccoli Slaw
Broccoli slaw is a side I usually passed up at the dinner table, get togethers or potlucks. I remember one day I was feeling a little daring and gave it a try. It was so delicious, the flavor combination was just perfect. I always get food inspiration from what I eat and fall in love with, so it was time to give it a try because I have never made it on my own.
I love walking through Trader Joe’s to get inspiration for new recipes to try. I looked over in the produce isle and found broccoli slaw. It was time to get busy figuring out the right combination for the dressing. After a few failed attempts, I found it, the mixture of a little sweet and a little sour. Second, I had to figure out what I wanted to add in the salad to give it a good burst of flavor. Cashews are one of my favorite nuts to munch on so I added those. I used salted in this recipe, but you could use unsalted as well. Next, I decided to add an apple to bulk up my salad without adding a little sweetness without refined sugars. Finally, add that delicious bacon in. The flavor combination is complete!
The combination of flavors in the dressing are perfect and super simple…. just two ingredients! Even though this dressing is mayonnaise based, it is not at all a mayonnaise tasting salad. This salad is light, crunchy with a little bit of a tang at the end and of course delicious.
Whole30 Broccoli Slaw Serving Suggestions
The special thing about this broccoli slaw is that is can be served as a side or eaten on it’s own for a delicious light lunch. In my house this salad is served a side, to one of the delicious meals below. I like to eat this salad for lunch the next day after the flavors have marinaded together over night, and you can even top it with some of the meat from the meal as well.

How to make Whole30 Broccoli Slaw
Making this salad is super simple and easy. Make sure when you are making this salad you use whole30 compatible mayonnaise. This salad is naturally gluten free, and low carb. I will walk you through some tips and tricks on the recipe with a little detail to answer any questions you may have.

Q: Can I use fresh broccoli instead of prepackaged broccoli?
A: Just use the stems of the broccoli. Send them through the grating attachment on your food processor and you have your broccoli slaw.
Q: Is Mayo Whole30 Compliant?
A: You will need to use a mayo that is prepared with a whole30 compliant oil or make it from scratch to ensure that the Broccoli Slaw is compliant. I like the mayo from Thrive Market really well which is compliant. Make sure to refer to the Whole30 website or book for all of the requirements of the diet.
Q: Can I make this Broccoli Slaw into a main dish?
A: Yes, just add grilled chicken or steak to the top of this salad.
Q: How do I store the leftovers from the Whole30 Broccoli Slaw?
A: This whole30 broccoli salad stores really well! The flavors are sometimes even better the next day. You can place them in an airtight container in the refrigerator for 3-4 days. Mix well before serving.

Whole30 Broccoli Slaw
Ingredients
- For the salad
- 1 package 12 oz shredded broccoli slaw mix, or shredded fresh broccoli
- 1 cup chopped sweet red apples
- 1/2 cup roughly chopped salted cashews or unsalted
- 1/4 cup crispy crumbled bacon
- For the dressing
- 1/4 cup mayonnaise Whole30 Mayo
- 1 tbsp red wine vinegar
Instructions
- In a small bowl, whisk together the mayonnaise and vinegar.
- Place the craisins in a bowl of hot water for 5 minutes or until they plump up, then drain.
- In a large bowl, combine the broccoli slaw, apple, nuts, bacon and craisins. Then fold in the dressing and mix until everything is evenly coated.
- Serve immediately. If you are not serving right away, save the bacon to put in right before serving and chill until you are ready to serve then stir in the bacon.
