Remember when we told you our Copycat Panera Chewy Chocolate Chip Cookies were the best ever? Â Well this Almost Famous Guacamole is about it’s equal in the world of guacamole!
When I used to travel a lot for my job there was always a food or restaurant that I looked forward to in a destination. Â Across the South there is a small chain of restaurants called J Alexander’s. Â Seasonally they would have guacamole on their appetizer list. Â It was THE BEST guacamole I had ever had! Â Over the late spring and summer I would have to have this guacamole at least once each trip I took to Nashville and Atlanta.
Since I no longer travel, and we live far from the South, I eventually HAD to create a copycat recipe of the J Alexander’s Guacamole. I think it is pretty close!
The keys to the recipe  is that the flavors are fresh and simple.  The other important factor is the texture.  In J Alexander’s guacamole the avocados are diced and not fully mashed giving a more substantial texture in your mouth.  This allows the flavor of the seasonings to coat the outside of the chunks of avocado but when you chew the pure creamy avocado bursts through.  So yummy.
So here is the method. Â First you need perfectly ripe avocados. Â This means that they just give when you gently squeeze them. Also, if you can easily pick off the stem and it is a fresh green color they are ready! Â They should not be super hard, and they should not be really mushy. Â TIP: Â If you avocados start to get to peak ripeness but you aren’t ready to make your guacamole, put them in the fridge to slow down the ripening process.
Using a paring knife, cut the avocado in half, remove the seed and use the knife to cut a criss-cross pattern into the avocado while still in the skin. Â Using a spoon scoop out the avocado into your bowl.
Squeeze the lime and pour the juice into the bowl. Add the salt and garlic powder and stir to evenly distribute and coat the mixture. Â This garlic powder is absolutely the secret ingredient. Â It brings out the flavor of the avocado like no other. Â If you haven’t used garlic powder in your guacamole then you are missing out on life!
Dice the cilantro, onion, and tomatoes and add them to the mixture. Â Tip: Make sure the onion is diced as finely as possible so that it is a more mild and evenly distributed flavor in the guacamole. Â If I have my food processor handy I will even use that to chop it super fine!
Mix well. Â Chill 20 min to allow flavors to distribute. Â Serve with crispy tortilla chips. Â Enjoy!

Almost Famous Guacamole
Ingredients
- 3 Perfectly Ripe Avocados
- The Juice of 1 Lime
- 1/2 Teaspoon Garlic Powder
- 1/2 Teaspoon Salt
- 1 Cup Cherry Tomatoes diced
- 1/2 Bunch Cilantro diced
- 1/3 Small Onion finely diced
Instructions
- Cut your avocados in half and remove the seeds.
- Cut a criss-cross pattern into the avocados and then scoop it out into a bowl.
- Add the lime juice, salt and garlic and stir to evenly distribute and coat.
- Dice the tomatoes, onion, and cilantro and add to guacamole.
- Stir all together without totally mashing the avocado chunks.
- Chill 20 minutes to allow flavors to meld.
- Serve with crispy tortilla chips and enjoy!
