My kids love BBQ Stuffed Baked Potatoes. They are very easy to make and a meal the whole family can enjoy! The thing I love about these potatoes is the meat can be used for other recipes during the week. That means less cooking and dirtying extra dishes during the week. Win for all!
BBQ Stuffed Baked Potato Recipe
I really love BBQ chicken sandwiches, and pretty much anything with BBQ sauce on it. I had surgery a few years ago and a friend brought me the most delicious dinner. My whole family devoured it. I knew I had to recreate it in my own way.
One of our favorite BBQ chicken recipes is my Creamy Slow Cooker BBQ Chicken. We use this chicken in so many different recipes. I got the idea to use this delicious chicken in the baked potatoes. Since one of the things we often do here on the site is make one meal and remake the dish into multiple meals over the course of the week, or when frozen the month to save tons of time.
That my friends is winning at dinner time! Making one meal and using it twice in two different ways to make two unique meals!
How to Make Baked Potatoes
This recipe uses 4 baked potatoes. To prepare the baked potatoes you can use whatever method you prefer or fits your schedule best! For each method I like to thoroughly wash the potatoes and pat dry, before starting. Then I pierce them 2-3 times with a fork, butter the potatoes, season with coarse salt and continue as directed. The cooking times below are for a small-medium potato. If you have large potatoes the cook time could increase.
- Crock Pot: Wrap potatoes in foil and cook them on high for 4-5 hours in the crock pot or until they are fork tender.
- Oven:This is the most traditional way and generally comes out with a great result. Wrap the potatoes in foil individually and them place them in the oven at 435˚F for 50-65 minutes or until fork tender.
- Pressure Cooker/ Instant Pot: Individually wrap the potatoes in foil, then place on a steaming rack in the pressure cooker with 1/2 cup water at the bottom. Cook on high pressure for 10-12 minutes. Quick release and test for fork tenderness.
- Microwave: Do NOT wrap in foil. Instead place potatoes in a microwave safe dish, then loosely cover with paper towel or lid and cook on high for 5 minutes, turn over and cook for an additional 5 minutes. Check for fork tenderness.
How to Make BBQ Stuffed Potatoes
This recipe is pretty simple to put together, even on the busiest weeknight!
- Take your bake potatoes, cut them down the middle, and place butter inside and fluff the potato. Fill with the creamy BBQ chicken mixture. You can use my crock pot BBQ chicken, or any leftover BBQ chicken you have on hand.
- Top with cheddar cheese. I like to use sharp cheddar since it will give you the most flavor in the least amount of cheese, but you can use any type of cheddar, colby jack, or mexican blend cheese.
- Bake at 400 degrees for 10-15 minutes. Drizzle with ranch dressing and sprinkle cilantro over top.
You can also add a lot of other topping options such as green onions, caramelized onions, or even french fried onions. Also, things like broccoli florets, other types of cheese, sour cream, and coleslaw make great toppings. You can add these under the cheese or on top after you take it out of the oven.
Is this recipe gluten free?
Yes, this recipe is naturally gluten free. Make sure to check the labels of all of your ingredients to ensure they are gluten free.
Could I use pork or beef?
Yes, you could use whatever meat you desire. If you have pork, beef, or other types of BBQ on hand, they will also work well for this recipe.
How do I store BBQ Stuffed Potato leftovers?
You can place the baked potatoes in an air tight container for up to 4-5 days. You can re-heat the potatoes in the microwave after removing the aluminum foil.

BBQ Chicken Baked Potatoes
Ingredients
- 4 russet potatoes baked
- 1 1/3 cup BBQ chicken
- 4 tbsp butter
- 1 cup sharp cheddar cheese grated
- 1/4 cup ranch dressing
- 1/4 cup cilantro chopped
Optional toppings
- caramelized onions
- green onions
- french fried onions
- black beans
- sour cream
- sweet corn
- broccoli florets
- coleslaw
Instructions
- Split open each baked potato, add butter, and fluff. Top each potato with 1/3 cup BBQ chicken.
- Add 1/4 cup cheddar cheese on top of the chicken and then bake at 400˚F for 10-15 minutes or until the cheese is melted and the chicken is heated through.
- Top each potato with 1 tbsp of sour cream, 1 tbsp of cilantro, and any additional toppings desired. Serve immediately and ENJOY!
