When Kraft asked me to create an easy family meal recipe using one of their new Recipe Maker kits I jumped at the opportunity. Let me tell you why…I know this is not a new story, but with 2 kids and a husband in the military that has long absences and long hours, when it comes to dinner I HAVE to have things that are quick, easy and healthy to make for me and the kids. Cooking is one of my favorite hobbies, and has always been. I am a bit of a foodie and I love to experiment in the kitchen and create new recipes. the thing is, the daily grind of preparing dinner while balancing 10 other things going on can really drain the fun right out of it.

I hate having to sacrifice convenience for really GOOD food! One of the tricks that I use to try to keep the balance and get the best of both worlds is using meal starters like Kraft Recipe Makers. These meal kits give you a base of a really good meal where all you have to do for meal prep is add the meat and a few other simple ingredients, cook it up and viola, dinner is served.
You have a great meal packed with flavors that would have taken you hours to prepare by hand, and let’s just face it, hours in the kitchen just isn’t in the cards at this stage of life. With a little additional creativity, you can have even more great gourmet meals with the helping hand you need to get it all done quick and easy.
Kraft has many varieties of their Recipe Makers kit, but Being from Texas {and always still at Texan at heart} I decided that the Tex-Mex Chicken Fajita kit was perfect to create a twist on the classic favors from my home state. Chicken Fajita Stuffed Baked Potatoes were born.
The reason I love making baked potatoes for a family meal is that you can stuff them full of meat, veggies, and toppings and get a hearty meal out of just one dish. It makes it simple to prepare and simple to clean up!
To make it even easier I prepare the potatoes by baking them in the crockpot. Simply line your crockpot with foil, wash and season the potatoes and wrap them with foil. Set them in the crock pot and cook on low for 8 hours. It is perfect to put them in the crockpot in the morning and then they are hot, ready, and perfect about the time the rest of the dinner is prepared.
The recipe maker kit came with two sauces, the simmer sauce and the finishing sauce. I cut up a package of chicken breast and cooked it in a skillet over medium-high with half the simmer sauce until it was cooked though.
Then I added chopped red and green bell pepper and onion, along with the rest of the simmer sauce and cooked about 4-5 more minutes.
Next you will take the potatoes out of the crockpot and roll them a bit to break up the insides. Cut each potato open and fluff with a fork. Then add a layer of cheese, a layer of the fajita meat, and another layer of cheese (I like my potato like I like my jokes extra cheesy!) Top with a dollop of sour cream, cilantro and the salsa finishing sauce.
Get ready for an explosion on your taste buds! This meal sure doesn’t taste like it only took a few minutes to put together. The simmer sauce gives the fajita meat a classic Tex-Mex flavor with a hint of lime. That perfectly pairs with the tangy sour cream, the sharpness of the cheddar, the zing of the salsa and buttery soft texture of the potatoes.
This is going on the regular rotation at our house! For this recipe I used about 1/3 of the meat mixture and made two medium potatoes. You could easily half or double the amount of potatoes to make a meal for one or for many depending on what you need that night. I love when I have left over meat because I will freeze it and use it in a different meal in the next week or two to save even more time in the kitchen.

{Easy Family Meals} Chicken Fajita Stuffed Baked Potatoes
Ingredients
- 2 Medium Russet Baking Potatoes
- 1 1/2 lb Boneless Skinless Chicken Breast thinly sliced
- 1 Red Onion thinly sliced
- 1/2 Red Bell Pepper thinly sliced
- 1/2 Green Bell Pepper thinly sliced
- 1 Kraft Tex-Mex Chicken Fajita Recipe Makers Kit
- 4 oz Kraft Sharp Cheddar Cheese
- 1/4 Cup Sour Cream
- Cilantro
- Butter
- Salt
Instructions
- Wash the potatoes and season with butter and salt.
- Wrap each potato in foil and place in a lined crockpot to cook on low for 8 hours
- Cook the chicken in a skillet over medium high heat with half of the simmer sauce until cooked through.
- Add the vegetables with the remaining simmer sauce and cook 3-5 additional minutes or until the veggies are tender.
- Cut the potatoes open and fluff with a fork.
- Add 1/4 of the cheese, layer with the meat mixture and top with 1/4 more cheese on each potato.
- To finish add a dollop of sour cream, drizzle with the Chipotle & Tomato Salsa and sprinkle with fresh chopped cilantro.

So true Geralin! I love little meal kits that can allow me to still have tons of flavor in my meals eventhough I have small kids and not a lot of time to cook! My favorite part about this one was the hint of lime. Yum!
