A healthy recipe makeover of the traditional burrito bowl that is crazy delicious and gluten free, dairy free, paleo and Whole30 compliant.
You know when things are just so obvious it is as if you don’t even need to say it. It’s so obvious that it might as well be on a billboard.  That is how this Fajita Burrito Bowl was.  As soon as the mexican style cauliflower rice was born it just went without saying that it was destined to be the mouthwatering base of a burrito bowl.

I usually like to tell a story or a little history about the recipe I created but this needs no words. Â It was just so good. Â The flavors all went together like they were always meant to be. Â There were so many fantastic textures and the creamy guacamole on top just sent it right over the top.
We love to do burrito bowls but I would have never thought to do them without the rice. Â I mean that is like the staple of the bowl. Â Sometimes healthy meal makeovers are like a disappointing movie sequel, Â but if you are doing the Whole30 or are just watching your carbs or trying to eat a little healthier, this will not disappoint. Â I foresee us making these long after the whole30 days are done.
The only thing that could really make this even better is that it is made out of leftovers, so it is super easy and gets the family excited to eat leftovers!  We had eaten these chicken fajita kabobs a few days before and I took the extras off the skewers, put it in a tupperware and then popped it in the fridge.  3 days later, a super easy meal!  If you don’t have it premade though you can still use the recipe and just cook it up quickly on the grill or in a skillet.
Just layer the mexican cauliflower rice on the bottom of your bowl. Â Then top with freshly chopped romaine, chicken or steak fajita meat and veggies, and a generous scoop of freshly made guacamole. Â You can add salsa, olives, or chopped cilantro to top it off. Â These are great for a family or a gathering because you can set all the ingredients out and let each person build their burrito bowl just how they want it.

Cauliflower Rice Burrito Bowl {Paleo + Whole30 Compliant}
Ingredients
- 1 cup Mexican Cauliflower Rice
- 1/2 heart romaine lettuce, chopped
- 1 cup fajita chicken & veggies
Toppings
- Guacamole
- Salsa
- green onions
- pico de gallo
Instructions
- Add the cauliflower rice to the bottom of a wide shallow bowl.
- Place the chopped romaine on the top of the rice, then top with the fajita chicken and veggies.
- Top with guacamole, salsa, green onions, pico, or your other favorite toppings.

Ha! Thanks Blair! I don’t cook super healthy by nature (ummmm bring on the CHEESE) so Whole30 was a legit challenge for me. I did manage to come up with some seriously delicious recipes, but it takes a bit more prep than I am used to. Healthy is a lifestyle change for sure! You are right though, this one is great for the family. My kids like anything they get to “build themselves” so these were perfect!
