This Lemonade Fruit Salad is easy to make and the perfect light snack or dessert for a hot summer day!
This fruit salad recipe is close to my heart. It is one of my grandma’s recipes but my first memory of it is when I was in kindergarten. For Mother’s Day my class put together recipe books for our moms. Our parents sent in recipes on index cards and my teacher made copies, laminated them and put them all together. Then each student signed their name and wrote a little note (or scribbled, after all this was kindergarten) to their mom on their copy. My mom still has hers and in it is this recipe for Lemonade Fruit Salad.
It is so easy to make all you need is fruit and a container of frozen lemonade concentrate. You can use any fruit you like. My favorite combination is melon, cantaloupe, strawberries, grapes, bananas, and blueberries. I love the taste that the melon and cantaloupe add to the other fruits, and the bananas and grapes are so good once you have added the lemonade and everything has melded together.
To make the salad you wash and cut your fruit, and mix it all together in a big bowl. Then open up your can of frozen lemonade concentrate and add it to the bowl. Stir everything together and you’re done! The frozen lemonade chills the fruit and it is sweetened so it adds a little sugar to the fruit. The best part is you can make it ahead of time. You know how you usually have to worry about bananas turning brown and getting all ugly and funky looking when they are cut up? The lemonade takes care of that for you! No more brown bananas (or apples if you add them). The lemon juice in the lemonade keeps everything looking fresh. I made it this weekend and the bananas still hadn’t turned brown the next day. I do recommend making and serving it on the same day if you are serving it at a party, but if you have leftovers (you won’t!) you can keep it in the fridge for a few days and have a delicious snack.
