School’s letting out for the summer which means it seems like I’m feeding my kids All. Day. Long. Anybody with me? These fruit and nut bites are the perfect healthy snack that hold over my little guys and they’re great for travel!
I’m Tracy from StayFitMom.com here to share with you one of my favorite healthy snacks that just got a fun KID makeover. My boys absolutely LOVE to help in the kitchen and this recipe had them squealing with excitement.
Anything with toppings seems to go over big with my kiddos. From ice cream, to pizza, to these fun fruit and nut bites, they love putting their own recipes together to make something delicious that’s unique to them!

I started with Stay Fit Mom’s 3 Ingredient Homemade Larabar Recipe and gave it a little twist by including 1/3 cups of oats and fun toppings.
The sky’s the limit with this recipe. You can add pretty much anything that suits your taste buds. My little guys are huge fans of chocolate {they get it from their mama}, so I picked up a bag of dark chocolate & white chocolate chips. Dried cranberries or yogurt covered raisins taste great with this recipe, and we couldn’t resist fun sprinkles.
In your food processor blend together 1.5 cups of cashews, 1/3 cups of oats, 1 teaspoon of cinnamon or cocoa powder and 2 cups of pitted dates. (Your dates will make or break this recipe. I always look for fresh, moist dates. I’ve had great luck with dates at Smith’s in the produce section of the store where they cut up fresh watermelon.) You’ll want to blend until the recipe begins to clump together. At this point you can add in your chocolate chips, cranberries, or yogurt bites.
Next you can recruit your little ones to help. My boys help me clump the mixture into golf ball sized bites. Then we went ahead and microwaved our chocolate chips, so that we could dip our fruit and nut bites. We dipped and drizzled with chocolate, added some sprinkles, placed them on a cookie sheet with wax paper, and refrigerated for 45 minutes before eating. You can also just include the chocolate chips in the bites if you want to save a little bit of time.

Ingredients
- 1.5 cups Cashews
- 1/3 cup Oats
- 1 teaspoon Cinnamon or Cocoa Powder
- 2 cups Pitted Dates
- Mix-ins/ Toppings of your choice
- – Cranberries
- – Yogurt covered raisins
- – Dark Chocolate Chips
- – White Chocolate Chips
- – Sprinkles
Instructions
- In a food processor combine Cashews, Oats, Cinnamon (or Cocoa Powder) and Pitted Dates.
- Pulse until the mixture is well blended and begins to clump together.
- Add Mix-ins of your choosing.
- Roll into golf ball sized bites.
- Dip into chocolate and add sprinkles if desired.
