When we were thinking about a fun idea for the kids this summer, we ended up with these healthy homemade rocket pops.
My son is obsessed with going to the park and the ice cream truck always seems to stop by when we are there. However, we all know how much added sugars and who knows what else are in those ice cream bars and popsicles! Having these at home are my go-to bribery instead.
The best thing is that you only need 5 ingredients! Not only are they healthy, they are super yummy, and the kids love them!!
They would be a great addition to any 4th of July party as well !
What you will need for 1 batch of 6 popsicles:
Popsicle Molds – Tovolo Blue Rocket Pops – Set of 6
1 Cup Coconut Water
1 Tablespoon Lime juice
1 Cup Strawberries
1 Cup Blueberries
1 Cup Water
Honey to taste (optional)
Directions:
1. Measure out 1 cup of strawberries, washed and cut in half. Put the strawberries in a blender with ½ cup of water and puree. Add honey to taste.
2. Pour the strawberry puree into each of the molds and fill 1/3 of the way full.
3. Put the molds in the freezer for about 30 mins, or until the strawberry puree is solid but still allows for the stick to be removed.
4. Repeat Steps 1-3 for the blueberries.
5. Measure 1 cup of coconut water and mix together the juice from 1 lime or 1 Tablespoon of store bought lime juice as well as honey to taste and fill the last 1/3 of the molds.
6. Put the molds back in the freeze for atleast 1 hour.
7. Let the kiddos enjoy!
