We eat them fresh, we grill them, we put them in fruit salad, but boy oh boy, you haven’t lived until you have oven roasted them and served them over rich, creamy natural vanilla ice cream!
This recipe looks fancy. Like something that might be a little too difficult to make, but really it was very easy and only took a few ingredients to put together and I felt like a 5 star chef. Probably because this recipe was created by one! To make this recipe you only need a few ingredients:
- Sugar
- Lemon, zested
- Ripe but firm white peaches
- Nonstick cooking spray
- Honey
- Baking soda
- Breyers® Natural Vanilla Ice Cream
I started out with the peaches. Roasting them is so simple! Start by halving them, then lay them in a baking dish face up. Mix up 3 tbs. sugar and the lemon zest and it will combine to be fragrant and moist. Then sprinkle that over the tops of the peaches and place them in the oven to roast. While they cook, start the honeycomb candy. I was most intimidated by this part of the recipe because candy making sounds hard. Let me assure you though, it couldn’t be easier, and my kids really loved watching the process and helping out with making it! You will place the sugar, honey and water in a sauce pan on high and stir continuously until it boils. Since the heat is so high, it is important to keep stirring so the mixture doesn’t burn. Once it starts to boil, you can reduce the heat and continue to boil (not stirring) for about 5 minutes. If you have a candy thermometer you can use it to measure when it reaches 305˚F, but if not just set the timer for 5 minutes and it should be just about perfect. Once you are done cooking the candy, remove it from the heat and whisk in the baking soda. You will really want to use a whisk on this to help you get it combined in. Also, it will start to bubble right away but make sure to stir it until the baking soda is dissolved. Once it is whisked in well, pour the candy out onto a greased baking sheet and let it cool. Once it cools it will harden and you will be able to break it up into small pieces to serve on top of the dish. When the peaches come out of the oven, dish out the ice cream, add some hot, fresh peaches, and a little crunch with the honeycomb candy and serve it up immediately. Delicious! Simple as promised, right?

Roasted White Peaches with Honeycomb and Vanilla Ice Cream
Serves: 8 / Prep Time: 10 minutes, plus 20 minutes cooling time / Cook Time: 25 minutes
Make-Ahead: Honeycomb can be stored in an airtight container at room temperature for up to 3 days.
1 cup sugar, divided
1 lemon, zested
4 ripe but firm white peaches, halved, pitted
Nonstick cooking spray
1/3 cup honey
1 1/2 tsp. baking soda
4 cups Breyers® Natural Vanilla Ice Cream
1. Preheat oven to 425°F.
2. In a small bowl, whisk 3 tbs. sugar and lemon zest for about 1 minute, or until sugar is fragrant
and moist. Arrange peaches, cut side up, in a 13×9-inch baking dish. Pour 2/3 cup water into
dish. Sprinkle lemon sugar mixture over peaches and roast for 25 to 30 minutes, or until peaches
are slightly softened and have released their juices.
3. Meanwhile, lightly spray a small baking sheet with nonstick spray. In a medium heavy saucepan
over high heat, bring remaining sugar, honey, and 2 tbs. water to a boil, stirring constantly.
Reduce heat to medium-high and cook, without stirring, for about 5 minutes, or until a candy
thermometer reaches 305°F. Remove from heat and whisk in baking soda just until blended and
mixture begins to bubble. Gently pour hot mixture onto prepared baking sheet and cool. Break
honeycomb into small pieces and reserve in an airtight container.
4. Spoon 1/2 cup Breyers® Natural Vanilla Ice Cream into each of 8 bowls. Top with warm roasted
peaches and warm juices. Sprinkle with honeycomb pieces and serve immediately.
