A tropical twist to a traditional ice cream sandwich for an over the top delicious Breyers ice cream sandwich hack packed with sweet delicious fruit!
Let me set the stage for you… we are about to move across the entire country and have just finished packing the truck with every last belonging we owned. It took about 3 days longer than expected because the movers were super disorganized and there was just so. much. stuff. Dinners, sides, veggies, and even dessert are all fair game. When I saw this recipe for a way to incorporate grilling and ice cream it was game on. I had to recreate Chef Antonia Lofaso’s Tropical Ice Cream Sandwich. I mean seriously… grilled pineapple and toasted coconut sandwiching a big thick slab of ice cream? Say no more. I’m sold.

Grilling the pineapple caramelizes the sugars and is probably the most delicious way you will ever find to eat pineapple. The combination of the warm grilled pineapple, the cold creamy ice cream and the crunchy coconut is a foodie’s dream.

I also have a little trick that makes creating the ice cream sandwich super simple! Just fill a plastic cup, roughly the same size as your pineapple, with ice cream and pack it tight. Pop it back in the freezer to let it harden up, then take it out and use a large serrated knife to slice right through the cup to create perfect discs of ice cream. Peel off the plastic and pop the ice cream between the pineapple. It couldn’t be simpler!

Chef Antonia Lofaso’s Tropical Ice Cream Sandwich
RECIPE SERVES 2 | PREP TIME 10 min | COOK TIME 3 min
- 2 (1/4-inch thick) fresh pineapple slices
- 1 cup Breyers® Natural Vanilla Ice Cream
- 2 Tbsp. toasted flaked coconut
- Grill pineapple slices over low to medium heat for 90 seconds on each side. Allow to cool briefly.
- Sandwich the softened Breyers® Natural Vanilla Ice Cream between the 2 grilled slices of pineapple. Coat sides in toasted coconut. Slice in half and serve.
