These watermelon muffins are the perfect healthy no cook treat for little hands to help make and little mouths to enjoy eating!
As Summer quickly approaches, the anticipation of school being out is building. Pool parties, lazy mornings and family BBQs are consuming my thoughts. Added bonus… all the fun summer foods. Popsicles, grilled veggies and watermelon! One of my favorite treats for the kids is making these fun watermelon muffins. They are delicious little bites of summer that you’re going to want to have on hand all summer long! Here’s how you make them.
Ingredients:
- Watermelon
- 1 – 8 oz. container of Cool Whip
- 1 – 6 oz. container of Yoplait Cherry Yogurt Original
- Gallon ziplock
- Cookie cutters (I prefer the circles)
- Mint (optional garnish)
- Muffin wrappers (optional)
Directions:
Add both the Cool Whip and Yogurt into a ziplock. Mix together fully.I add a chip clip to the end and cut the tip of the bag as it is works great for adding the muffin “frosting.”Next you are going to slice the watermelon into thin slices, approximately a half an inch thick.Using your circle cookie cutter, cut out pieces of watermelon small enough to fit in a muffin wrapper.
Place one piece at the bottom of the wrapper, add some cool whip mixture, add another watermelon piece on top. Top the muffin with some more cool whip mixture and top with a small piece of mint.
You have yourself a sweet little treat that the kids are going to adore. HAPPY SUMMER!!!
